  • 320g Sheet ready rolled puff pastry
  • 1/2 Courgette
  • 12X Cherry tomatoes
  • 6X Sun dried tomatoes
  • 2tbsp Capers
  • 12X Pitted kalamata olives
  • 1/2 Red onion

Tomato Sauce

  • 3tbsp Tomatoe puree
  • 1tbsp Olive oil
  • 1tbsp Water
  • 2tsp Balsamic vinegar
  • 1/2 tsp Pepper
  • 1/2 tsp Salt

Method

Place the puff pastry on to a baking tray, cuttng in to 6 equal pieces and create a border with a sharp knife around each square (1 1/2cm border)

Put all the ingredients for the tomato sauce into a small bowl and mix with a fork. Spread the sauce inside each pastry square up to the border

Peel the red onion and trip courgette + cherry tomatoes. Finely slice them along with the tomatoes, capers and olives very fine to ensure they all cook quickly.

Arrange the ingredients on top of the pastry squares up to the border.

Brush the edges of the pizza with milk. Oat milk will work fine.

Put the tray in the oven. Cook for 20-22 minutes. Remove and add the grated cheese. Place back in the oven for a further 3 minutes to melt.

Remove from the oven. Add basic leaves and serve! Enjoy!
